De-alcoholisation is a process of depriving wine or beer of its alcohol component, typically obtained by evaporation, distillation or osmosis.
Starting with Chardonnay grapes and using one of the most popular methods for removing alcohol, reverse osmosis, the dealcoholised wine produced for La Collina di Dioniso Srl is born.
How alcohol-free wine is made
Reverse osmosis is a filtration technique in which ethanol, water, aromatic and phenolic compounds are separated from the wine using semi-permeable membranes.
Subsequently, the alcohol is removed by distillation and the aromas are reintegrated.
At this point, the dosage of sugars and acidity is re-balanced, resulting in a product that provides an enveloping sensation, similar to that imparted by alcohol.
The flavour of dealcoholised wine may vary from that of traditional wines depending on the production process and the sensory perception of the taster.
An important advantage of dealcoholisation is that the phenolic component, i.e. those compounds associated with health benefits, is preserved.
Alcohol-Free Wine: A New Frontier of Conviviality
Alcohol-free wines are a viable alternative to classic soft drinks, meeting the needs of those who, for physical, cultural or personal reasons, cannot or do not wish to consume alcohol. This includes young people, pregnant women, drivers or abstemious persons. This new product aims to create different convivial alternatives, which, like traditional wines, can be consumed during meals, making ad hoc pairings.
